Chocolate Crazy Cake

The reason this cake has the name Chocolate Crazy Cake is due to the ingredients and the lack there of os it is easy to pair this Chocolate cake and wine. When my first child was born our income was low. Due to my husband having the rank of Lance Corporal in the Marine Corps. I always liked to bake from scratch. The church I went to was in North Carolina and the women all cooked everything homemade. So this is where I acquired this recipe.

Why Crazy?

This cake has the name Crazy because there are no eggs, milk, butter (except to grease the pan) and you use vinegar and oil. CRAZY HUH? This cake recipe is for a single layer so I always double the recipe for a two layer cake.

Ingredients

1 1/2 C Flour

1C Sugar

3 T Unsweetened Cocoa

1 t Baking Soda

1/2 t Salt

5 T Oil

1 T Vinegar

1 1/2 t vanilla

1 C water

Mix and Bake 30 minutes

Preheat 350 degrees

This cake is very moist and very easy to make. Additionally I always add double the cocoa because I like chocolate. The cocoa is an unsweetened powder.

This cake is a good pairing because it is chocolate with a Merlot. The Ricord Merlot from our winery is a wonderful choice. The tanins are just right when tasting with this wine. This is not a sweet wine so it balances out the sweetness of the cake.

It (like all of our wines) have all natural ingredients and use no chemicals in the fields. Their upline of family wine makers have taught them the proper way to make wines. Fermented naturally for 2-3 years. This is the way wines were made in the time of Jesus.
